&lt;p&gt;I eat these straight off the cutting board sometimes — just a squeeze of lemon and a pinch of flaky salt. But if you want the full chicken parm experience, spoon some warm marinara on top, add a slice of fresh mozzarella, and cover the pan for a minute to melt it.&lt;/p&gt;
&lt;h2 id="recipe-4-thai-basil-chicken-pad-kra-pao-style"&gt;Recipe 4: Thai Basil Chicken (Pad Kra Pao Style)
&lt;/h2&gt;&lt;p&gt;This one&amp;rsquo;s a bit of a cheat since it uses ground or finely chopped chicken breast, but it&amp;rsquo;s hands-down the fastest recipe in my rotation.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;What you need:&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;
&lt;li&gt;1 pound chicken breast, finely diced or ground&lt;/li&gt;
&lt;li&gt;2 tablespoons vegetable oil&lt;/li&gt;
&lt;li&gt;4 cloves garlic, minced&lt;/li&gt;
&lt;li&gt;2-3 Thai chilies, sliced (or 1 teaspoon red pepper flakes)&lt;/li&gt;
&lt;li&gt;2 tablespoons oyster sauce&lt;/li&gt;
&lt;li&gt;1 tablespoon fish sauce&lt;/li&gt;
&lt;li&gt;1 tablespoon soy sauce&lt;/li&gt;
&lt;li&gt;1 teaspoon sugar&lt;/li&gt;
&lt;li&gt;A big handful of fresh Thai basil leaves&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;strong&gt;How to make it:&lt;/strong&gt;
Get your wok or skillet screaming hot. Add oil, then garlic and chilies — stir for 15 seconds. Add the chicken and break it up, cooking for about 4-5 minutes until no longer pink. Pour in the oyster sauce, fish sauce, soy sauce, and sugar. Toss everything together for another minute. Kill the heat and fold in the basil leaves. They&amp;rsquo;ll wilt almost instantly.&lt;/p&gt;
&lt;p&gt;Serve over jasmine rice with a fried egg on top. That runny yolk mixing into the sauce is genuinely one of my favorite bites in all of cooking.&lt;/p&gt;
&lt;h2 id="a-few-tips-ive-learned-the-hard-way"&gt;A Few Tips I&amp;rsquo;ve Learned the Hard Way
&lt;/h2&gt;&lt;p&gt;&lt;strong&gt;Let the pan get hot.&lt;/strong&gt; Seriously. If you put chicken in a lukewarm pan, it steams instead of sears. You want that Maillard reaction — the browning that creates flavor. Wait until the oil shimmers or a drop of water dances across the surface.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Don&amp;rsquo;t move the chicken around.&lt;/strong&gt; Once it&amp;rsquo;s in the pan, leave it alone for at least 3 minutes. Constant flipping prevents browning and adds cooking time. One flip is all you need.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Use a meat thermometer.&lt;/strong&gt; The &lt;a class="link" href="https://www.usda.gov/media/blog/2011/05/25/cooking-meat-check-new-recommended-temperatures" target="_blank" rel="noopener"
 &gt;USDA recommends&lt;/a&gt; an internal temperature of 165°F (74°C) for chicken. With thin-cut breasts, you&amp;rsquo;ll hit that quickly — but checking takes the guesswork out of it.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Season before, not after.&lt;/strong&gt; Salt needs time to penetrate the meat. Even five minutes of seasoning before cooking makes a noticeable difference compared to salting at the table.&lt;/p&gt;

&lt;/h2&gt;&lt;p&gt;I&amp;rsquo;ve found the best way to make weeknight chicken sustainable is to prep on Sunday. I&amp;rsquo;ll butterfly and season 4-6 breasts, stack them between parchment paper, and store them in the fridge. When Tuesday hits and I&amp;rsquo;m exhausted, I just grab a piece, heat the pan, and dinner&amp;rsquo;s ready before the oven would&amp;rsquo;ve even finished preheating.&lt;/p&gt;
&lt;p&gt;You can also mix up your sauces ahead of time. The honey-garlic sauce and the Thai basil seasoning mix both keep well in the fridge for up to a week. Pour, cook, done.&lt;/p&gt;
&lt;p&gt;Weeknight cooking doesn&amp;rsquo;t have to be complicated. It doesn&amp;rsquo;t even have to be creative every single night. Sometimes the best meal is the one that&amp;rsquo;s on the table in 15 minutes, tastes great, and leaves you with enough energy to actually enjoy your evening.&lt;/p&gt;
